Classic Ingredients
- Basmati rice, dry 360 g
- Ghee 42 g

Method
Keep it covered
After the 15-minute cook: turn off the heat, leave the lid on, do not fluff, wait 10 minutes.
Only then remove the lid and fluff.
Build the base
- Rinse rice thoroughly and drain well.
- Melt ghee over medium heat.
- Toast rice 3–5 minutes, stirring frequently.
- Add garlic and cook 30–60 seconds.
- Add any dry seasonings being used and bloom 15–30 seconds.
Cook covered
- Add water + Better Than Bouillon.
- Bring to a boil.
- Cover and reduce heat to low.
- Cook 15 minutes.
Rest before fluffing
- Turn off heat and leave covered, untouched, 10 minutes.
- Only then remove lid and fluff.
Covered rest guide
- Cook 15 minutes covered on low.
- Heat off Do not remove the lid.
- Wait 10 minutes untouched.
- Do not fluff No stirring between cook and rest.

Quick Toasted Ghee Rice
Purpose
Granulated-onion weeknight version of the same toasted ghee rice backbone.
Base batch additions
For 360 g rice: 1–1½ tsp granulated onion. Optional: ¼ tsp MSG.
Special method
After garlic cooks 30–60 sec, add granulated onion, bloom 15–30 sec, then immediately add cooking liquid.

Golden Toasted Ghee Rice
Spices for 360–412 g rice
½ tsp turmeric, 1 tsp ground cumin, 1 tsp smoked paprika, ½ tsp ground coriander, black pepper to taste, and 1 bay leaf while cooking.
Strong version
Use 20–25 g garlic, the upper end of the approved bouillon range, and 5–10 g finishing ghee. Optional finishes: fresh lemon, parsley, or cilantro.
Pairings
Shawarma, grilled chicken, kebabs, curry, spiced beef, and Mediterranean / Middle Eastern meals.
Golden spices belong to this variation only. They are not merged into Classic and they do not silently become live-scaled ingredients.
