20 oz sliced white mushrooms go into a 14″ Dash skillet at 400°F and pass through a wet, steaming phase before they brown. Keep cooking uncovered until the released moisture is gone and the pan is properly sizzling again — only then does butter and seasoning finish the pan.

Ingredients
- Sliced white mushrooms 567 g
- Olive oil or avocado oil 1½ tbsp Either oil works; no single oil is canonical over the other.
- Butter 2 tbsp Added at the finish stage, not during initial cooking.

- Black pepper plenty Qualitative — no exact measurement is given or invented. Season generously.
- Garlic powder 1 tsp Use one, not both: this garlic powder amount, or 3–4 cloves fresh garlic, minced. Fresh garlic is a fixed, authored range and does not scale with the batch.
- Soy sauce 2 tsp
- Worcestershire sauce 1 tsp
Optional finish: a small squeeze of lemon, freshly grated Parmesan, or neither — see Finish Choices. None of the three carries a measured amount and none scales with the batch.
Method
Wait for the sizzle to come back
The watery bubbling / steaming phase is not done.
Keep cooking uncovered until the released liquid is gone and the pan returns to a proper sizzle. Stopping during the wet, steaming stage produces steamed mushrooms, not the intended fried result.
Build the first brown
- Preheat the 14-inch skillet to 400°F.
- Add the olive oil or avocado oil.
- Add the sliced mushrooms. Do not salt yet.
- Cook mostly untouched for 4–5 minutes, then flip or stir and cook for another 4–6 minutes.
Cook through the water
- The mushrooms will release a lot of water. Keep cooking uncovered at 400°F, stirring occasionally.
- Wait until the released liquid fully evaporates and the wet bubbling/steaming turns back into a proper sizzle.
- Once the sizzle returns, spread the mushrooms out and let them brown for another 2–3 minutes.
How to read the watery phase
- Expect water. The mushrooms will release a lot of liquid.
- Keep cooking uncovered at 400°F.
- Listen. The wet bubbling/steaming should eventually turn back into a sizzle.
- Then brown. Once the liquid is gone, spread the mushrooms out and give them another 2–3 minutes.
- Stop cue: dark golden-brown edges, pan sizzling again.
Base-batch guidance: the watery phase runs another 5–8 minutes at the 567 g / 20 oz base batch. This is not a fixed or scaled timer — judge it by the sizzle returning, not the clock.
Finish and gloss
- Reduce the heat to 325–350°F.
- Add the butter, kosher salt, plenty of black pepper, and the garlic — the garlic powder above, or the fresh garlic alternative, never both.
- Add the soy sauce and Worcestershire sauce, then toss for 1–2 minutes until glossy and slightly sticky.
- Taste and adjust the seasoning.

Troubleshooting
Mushrooms look steamed / pale
Keep cooking through the released-water phase; the sizzle has not returned yet.
Pan still wet
Continue cooking uncovered until the released liquid fully evaporates.
Not browning
Wait until the sizzle returns before the final browning stage; browning cannot happen while liquid remains.
Sauce not glossy / not sticky
Finish 1–2 minutes at reduced heat (325–350°F) with the butter and seasonings, tossing until glossy and slightly sticky.
Finish Choices
Lemon
Best with fish, seafood, lighter chicken, or rich dishes needing acidity. A small squeeze, added right before serving.
Parmesan
Best with steak, burgers, pasta, potatoes, chicken, or other hearty savory meals. Freshly grated, added after the heat is off. No exact amount.
Neither
Appropriate for a strongly seasoned main. No finish is required.
Notes
The 5–8 minute watery-phase duration is base-batch guidance for the 567 g / 20 oz batch and does not scale linearly with a smaller batch — moisture release and evaporation don't track weight proportionally. Judge it by the sizzle returning, not a timer.
Fresh garlic (3–4 cloves, minced) is a static, non-scaled alternative to the garlic powder above — use one or the other, never both.
Lemon, Parmesan, and "neither" are conditional finishing choices, not proportional ingredients; none carries an invented amount.
