Creamy BlendedAglio e Olio

Garlic softened gently in olive oil, then blended with the remaining raw oil and hot starchy pasta water into a smooth, glossy emulsion. The oil never separates and the garlic never browns — the finish is creamy and loose-aioli-like, not oily.

This batch

225 g 7.9 oz
  • Olive oil 80 ml Part softens the garlic; the rest blends in raw.
  • Garlic cloves 6 Large cloves, sliced. Range: 5–7.
  • Pasta water up to ≈80 ml A working ceiling, not one addition. Start with ≈3 Tbsp and add gradually to texture.

Ingredients

  • Spaghetti, dry 225 g
  • Extra-virgin olive oil 80 ml Use approximately ¼ cup of it to soften the garlic; the remainder is blended in raw. ≈⅓ cup at the 225 g base batch
  • Garlic, large cloves, sliced 6 Recommended for the base batch. Source range: 5–7 large cloves.
  • Red pepper flakes ⅜ tsp Recommended for the base batch. Source range: ¼–½ tsp.
  • Hot starchy pasta water up to ≈80 ml Not a single addition. Start with approximately 3 Tbsp, blend, then add more gradually and stop by texture. Keep extra reserved water beyond this figure. ≈⅓ cup at the 225 g base batch
  • Lemon juice ¾ tsp Recommended for the base batch. Source range: ½–1 tsp.
  • Parsley, chopped 8 g An approximate working figure for a small handful, not an exact measurement.
  • Salt to taste
  • Black pepper to taste

Parmesan or Pecorino is an optional finish only. It carries no measured amount in this recipe and does not scale with the batch.

Method

Do not brown the garlic

This is the rule the whole recipe depends on.

Keep the heat low. The garlic should finish soft and fragrant with tiny gentle bubbles around it. Deep color is not the goal — browned garlic turns the finished dish bitter.

Soften the garlic

  1. Slice the garlic.
  2. Put the sliced garlic with approximately ¼ cup of the olive oil into a cold skillet.
  3. Bring the skillet up over low heat.
  4. Cook approximately 3–5 minutes, until the garlic is soft, fragrant, and shows tiny gentle bubbles.
  5. Do not brown the garlic.
  6. Add the red pepper flakes and black pepper for approximately the final 20–30 seconds.
  7. Remove from heat.

Build the emulsion

  1. Blend the warm, softened garlic together with the garlic-infused oil and the remaining olive oil — the portion not used in the skillet.
  2. Start with approximately 3 Tbsp hot starchy pasta water and blend until it begins emulsifying.
  3. Add additional pasta water gradually, working toward the displayed target only as needed and judging by texture rather than by using up the amount shown.

How to use the pasta-water target

  1. Start with ≈3 Tbsp hot starchy pasta water.
  2. Blend until it begins to emulsify.
  3. Then add more gradually, a little at a time.
  4. Work toward the displayed target only as needed. It is a ceiling, not a required addition — and keep extra reserved water available beyond it.

Stop when it is: smooth, pale, glossy, creamy, loose-aioli-like. It must not look like separated oil, an oil puddle, or watery pasta sauce.

Finish the pasta

  1. Reserve very starchy pasta water.
  2. Move slightly undercooked pasta into the skillet.
  3. Add the blended emulsion.
  4. Finish over low heat approximately 1–2 minutes, loosening with additional reserved pasta water as needed.
  5. Finish glossy and creamy, avoiding visible oil separation.
  6. Finish with the parsley and lemon.

Troubleshooting

Garlic browned or bitter

Heat was too high, or the garlic was cooked too long before being removed from heat.

Emulsion too thick

Loosen gradually with reserved pasta water.

Emulsion too thin

Too much pasta water was added before the emulsion was judged ready; use less next time and rely on the gradual-addition method.

Oil separating or puddling

The emulsion was not fully blended before being added to the pasta, or the pasta was finished over too-high heat.

Pasta too dry after tossing

Loosen with reserved pasta water.

Notes

The garlic, red pepper flake, and lemon figures are the recommended working scalars. Their source ranges — 5–7 large cloves, ¼–½ tsp flakes, ½–1 tsp lemon — are shown with each ingredient and remain valid at any batch size.

The parsley figure is approximate: it stands in for a small handful rather than an exact measurement.

The pasta-water figure is a working target and ceiling for the batch, not an amount to add all at once. Texture decides how much is actually used.
